In my quest to make it through these cold winter nights (and days), I have focused much of my attention on cooking, reading, and crocheting/knitting. But cooking had dominated this blog thus far as I have reintroduced myself to the joys of fresh ingredients and homemade meals. Homemade meals like soup! Hearty soups that satisfy and nourish without being overwhelming and complicated.
My mother, a southerner at heart, enjoyed cooking meals for the week and we grew up on beef stew, chili, lentil and chicken soup. When life gets too complicated or when my body aches from stress, I always turn to soup and stews. And last week, at my husband’s request, I decided to try my hand at Creamy Potato Leek Soup.
Now, I admit that I have NEVER had Potato Leek soup before. I had had leeks in veggie soup and I have had baked potato soup, never the two together. And, for the first time in a very long time, I could not find a recipe, that in my mind’s eye, would make a soup yummy enough to warm my heart and belly.
On a side note, if you share recipes on a blog, please provide visual support of your recipes. This goes double for those writing a cookbook! I am a visual person. I don’t really need to read the steps to a recipe, but I do need to see the final product. I need to know how everything is supposed to look when all is said and done!
With that said and done, let’s talk about this soup. It is very creamy. Very tasty. It is made up of all the the things that someone who is trying to watch his/her weight should avoid! But, it is so good. Really good! Like, “honey I have a headache so go get me a bowl of this soup and leave me alone for 15 minutes” good! It will make you feel like you have been hugged by your grandma and wrapped in a cocoon of your favorite pillows…
And how do you make this? Sorry I’m not willing to share this one yet.




This soup looks so yummy. I know it must be so warm and comforting during these cold nights! I keep saying I want to get more into soups and stews (and definitely want to invest in a good crock pot) but I’ve yet to do that. This is one of my goals for 2011!

Soups are my favorite! And I love my crock pot. When I was teaching, hubby would put dinner in the slow cooker right during the afternoon and by the time I got home at 5, dinner was ready! LOVED IT!
