Menu Planning Week Two (or the one where I realize what I have been missing)

Weekly Menu PlanningThe strange thing about this Menu Planning thing is that I now ALWAYS have something to eat. Not that this is a bad thing, but if you remember anything about my weight loss struggles, I have stunted my metabolism because I am notorious for not eating enough. OK, so that’s not the only reason, but it is a major problem for me.  However, now that I am cooking all the time and making sure that my husband goes grocery shopping regularly rather than twice a month like we have been previously, our fridge is always stocked. And I am actually starting to enjoy left overs.

In addition to the meal planning, I have started working out again. Between my treadmill and my Wii, I have tons of things to do, so there really is no excuse. And speaking of the Wii, I bought Michael Jackson: The Experience, and not only is it a great workout (if you do it right), my daughter LOVES it! Absolutely loves it! Score one for quality family activities.

Monday

B: Oatmeal

L: Subway Sandwiches

D: BBQ Pork with Sweet Potatoes and Kale (We actually had Chinese b/c we got home too late to cook the pork)

Tuesday

B: Oatmeal and Yogurt

L: Big Fat Salad (we actually had leftover Homemade Pizza from Sunday)

D: BBQ Pork with Sweet Potato and Kale

Wednesday

B: Yogurt and Homemade Granola

L: Left over BBQ Pork with Sweet Potatoes and Kale

D: Rib Roast, Mixed Veggies, and Egg Noodles

Thursday

B: French Toast, Scrambled Eggs, and Bacon

L: Left over Rib Roast with Salad

D: Honey Mustard Chicken with Quinoa and Spinach

Friday

B: Omelets with fruit

L: Tuna Salad on Whole Wheat Toast

D: Spaghetti and Meatballs with Salad

Saturday

B: Cereal

L: Sunbutter and Jelly Sandwiches and carrot sticks

D: Left over Spaghetti and Mearballs
